Can you believe it’s Monday, June 18th?!  I’ve been graduated for over a month, I’m halfway done with my internship, and it’s already the third week of the Paleo challenge.  Speaking of that, I had to subtract points for cheating for the first time since the start of the challenge.  Saturday night, I had a glass of wine and Sunday I had wings… and they were pretty darn yummy.

But, I’m 100% back on track and didn’t feel too icky after divulging into non-Paleo goodies; I’m just proud I didn’t give into any of the homemade pies or cookie dough cupcake (what the f, YUM) that were at the Farmer’s Market.  That place would be the ultimate place to get cheat food, take it home, curl up and nibble all day.  Good thing I know that side effects and would have a week full of headaches, clothes that don’t fit, and constant trips to the porcelain throne.

Yesterday, I went to the gym and got to do a WOD with fellow beasts; they did 4 workouts but I peaced out after 1 so I could spend some more time with my boy before leaving again for the week.  Here’s the one I did partnered with Molly:

If I wasn’t partnered with her, I probably wouldn’t have gone as hard!  It’s so nice to have someone to work with and push you harder than normal, especially when it’s your older sister who you’ve been trying to catch up to since the old days at Muscle Corp.  and playing hours of 1-on-1 basketball on the driveway!

The most exciting thing I did this weekend was REGISTER FOR MY CROSSFIT LEVEL 1 CERTIFICATION!!!!!!!! I wanted to do it before the end of 2012 and finally gave in and signed up.  September 8th & 9th are going to be dates that I will never forget.  What makes it better is that I get to go with 6 fellow CrossFit Instinct members – I. Cannot. Wait.  I went to bed feeling excited, nervous, and happy with the decision I made.

Then my ‘beautiful’ iPhone harp alarm went of at 4am, letting me know that I need to get my @$$ up and go workout.  I knew what I had coming because I woke up around midnight and checked the WOD for Fit Bodies.  More hamstring work with overhead stuff… hellooooo triceps and legs!  All I can say is that walking up the 3 flights of stairs to my apartment isn’t cool.  Every step I feel like I’m going to fall backwards.  Needless to say, carrying 10 bags full of veggies and meat up those stairs felt like a WOD.

After catching my breath and gathering myself, I spent 2 hours cooking!  Thanks to Nelly radio on Pandora, it made things go a lot quicker.

So this was my attempt at making zucchini fritters… they didn’t come out very pretty or presentable.  But, they taste awesome so that’s all that matters!  I didn’t really measure anything too precisely but here’s what’s in them:

-6 small shredded zucchini

-1 red onion

-1/2 cup broccoli cabbage mix

-Cholula sauce

-3 eggs

-1/4ish cup coconut flour

-spices

This picture is only half of what it made… I am cooking for all week so now I have plenty!

 

Doesn’t this look like puke? Haha it looks disgusting, but is actually pretty good.  I’m going to use it on meats and mix in with tuna and salmon.  I will probably add other stuff to it too, like avocado or paleo mayo, depending on my food mood.

This was basically to get rid of some things in my kitchen, so it’s trial and error with ingredients.  I really just wanted to throw raw kale in the food processor and see what happened… and this happened.  Puke-looking, um, Pesto?

 

My favorite!  Paleo Mayo .  This mixes with everything and can be tweaked into any flavor with some spices and imagination!

 

 

 

 

 

 

 

 

…and this is what happens when you get lazy scraping the mayo out of the food processor.  I was sad that almost 2 tbsp. of my beloved mayo was now inedible and all over the floor.  Grr.

 

 

 

 

 

 

 

 

I also cooked up some beets, eggs, and meat.  Now all I have to do all week is eat.  And I never ever have problems with that!

 

Post- Whole30 hangover

WHOA. Where has the time gone?? These past 4 days have been so exciting and busy, they have literally flown by.

Wednesday was officially my last day of school and my last final; I was up nice and early to study since it was at 7:50am.  It was also the day my sister had to defend her thesis and I was lucky enough to go watch all of her dedication and hard work pay off– she did an awesome job!  Afterwards, we decided we needed to celebrate, true ISU style, and head over to The Pub.  At 2:45pm.  It was all downhill from there.

I had my first non-Whole30 item in 42 days!  Beer.  I can’t lie, it was mighty tasty.  After sitting and chatting for a couple hours, we headed down to Medici, a little restaurant/bar in uptown, to meet with some of my sisters classmates and teacher.  What’s the smartest thing to do after having pitchers of beer?  A blueberry muffin martini.  To put it lightly, this thing was nasty.  And strong.  The kind of strong where you get goosebumps and a twisted face after taking a sip.

After choking down that glass of blue grossness, we went back to The Pub and I thought I might as well keep switching things up and get some Vodka Lemonades.  Mmm those were super good!  If you’ve ever been to Normal and experienced The Pub on a Wednesday night, you know it gets crazy packed and full of college kids.  Since there was nowhere for our big group to sit together, we headed to a friend’s apartment and started playing this stupid game.  With beer.  And I sucked bad at the game.  All of that equals disgusting things.

Let’s just say my night didn’t end pretty.  I saw swiss chard and meatza in ways I never want to see them again.  Ew.

As my sister said, at least I went out with a bang! Ha, funny because I woke up Thursday and felt like pure death.  I felt paralyzed.  I couldn’t even move out of bed for an hour; when I did, I moved to my couch and laid there.  I somehow mustered up energy to take a shower and amazingly didn’t fall over.  It might have been the worst 3 hours of my life.  AND I had to start packing my apartment up that day.  Ugh, it was a horrendous day to get through.

Friday was 100 times better because I actually worked out back at CrossFit Instinct! It was me, my sister, and a fellow female member (she’s going to Regionals yay!) and we did a partner-trio WOD-

Two people flipped a 205 lb. tire back and forth while the other person completed 10 KB swings (with a 70#!) and 30 double unders for a total of 10 min.  I’ve never used a 70# KB in a WOD before and it was a monster!  My forearms are still sore from that dang tire too!  The other ladies did amazing and it was so fun to get a good workout in.

What’s even better is that my other sister drove back to ISU with me to celebrate me and my other sister’s graduations!  It was such a fun night hanging out with both of them- I love having 2 older sisters who are my best friends! =)

Saturday was moving/graduation day.  I love how the apartment places make us move out by 5pm on graduation day… so nice.  Thank God my sister was here to help me or I would have been SOL.  Finally, graduation happened, we went out to dinner with my parents (yay!) and they took another load of my junk home.  Moving is such a headache, but I’m lucky I moved into my sisters apartment while she’s away for the summer.

So that’s it.  Tomorrow starts another chapter in life – the summer internship.  We get to pay the school for a “class” so I can work for free for 12 weeks.  Makes so much sense, right?  What I am super excited for is this weekend… North Central CrossFit Regionals!!!!!!! Yay!  I will be the best cheerleader in the crowd.

Ok, time to shower and chill.  Went on a 90 minute bike ride for the first time in ages so I’m probably going to be sore in all the wrong spots tomorrow!

Busy as a Bee

I have been a terrible blogger lately.  It feels like it’s been forever since I’ve been able to sit here and aimlessly type about everything that comes to mind; it’s been a hectic week and probably will be for the next 2 weeks!  Saturday was my mom’s birthday, Monday was my birthday, I have 3 finals this week, party on Friday, Graduation Saturday, and I have to be moved out of my place by Saturday.  Then Monday is the first day of my internship.  Whoa.  All so exciting!!!

Needless to say, I haven’t made any new food this week.  Come to think about it, I have nothing in my fridge right now… just some hard-boiled eggs and shredded zucchini. Yeah… time for the store tonight!  And most likely I won’t be making anything new or interesting, unlike my sister! ( <—- link to HER blog with some good recipes and pics!)

You know what always makes my day? Especially on my birthday? Flowers!

Both my mom and my sister got me some beautiful flowers! =) Lovely!

My other sister cooked me an amazing Whole30 dinner!  It’s so nice to have your sister living in the same college-town as you! And one that is willing to cook, make it Whole30, and make it taste super good!

We had some good (and needed) laughs over some TV shows and got to chatter up our excitement for Wednesday afternoon.  We are both done with finals that day, she defends her thesis, and we will both be done with school!!! Know what that means?  We’re goin’ to The Pub!  So today will be my official last day of eating/drinking clean.

Now, I’m not going to go out and shove my face with cheese balls, candy, chips, and fried chicken.  No, I’m just going to drink something that’s not coffee, tea, or water for the first time in over 6 weeks.  I plan on continuing eating clean, even when McDonald’s, the ultimate hangover food, is right down the road.  Some of you may be shunning me for taking a break from all this cleanliness to go out for some drinks, but what did you do to celebrate your college graduation and 22nd birthday? Hmmm??  You only live once, right?

I hope my inner-thigh soreness starts to go away though.  As always, the past few WODs have made me walk funny and have made it uncomfortable to sit.  Just in time for studying and sitting through hours of testing!

Enough jibber-jabber.  I have to study and get in the right mindset to demolish my upcoming WOD:

It’za meatza!

Today has been 100 times better than the past two days, thank god.  It started to get better last night when I went to go see Shrek the Musical with my sister!  It was hilarious and I got to spend time with my soon-to-be-wed sister, so we chatted about her wedding and now I’m even more excited for her (and her fiancée!)  Even though I got home late and went to bed almost 2 hours later than usual, I still slept like a rock.  [I didn’t move at all again. Two nights in a row of no movement during sleep = slightly sore hip in the a.m.]  But, I woke up feeling great, not bloated, and not craving something that I shouldn’t.  Woo!

After my first class, I made my way to get my CrossFit on.  It kicked my @ss.  Literally.  I am already sore.  Instead of toe 2 bar, I did GHD sit-ups because my hands were of stage 2-rippage from earlier this week.

Needless to say, 168 overhead walking lunges are no joke.  Neither are 84 GHDs.  And thanks to peer pressure, the tabata sit-ups and supermans put the cherry on top.  Walking and standing up straight tomorrow will be interesting.  BUT, I felt AMAAAAZING afterwards.  I ❤ WODing!  =)  Kind of obsessed.

I am trying out a new recipe!  MEATZA!  I made a smaller recipe since it’s just me eating it and I wouldn’t want anything to go bad.  Here’s the info:

1 lb. ground beef

1/2 cups tomato sauce

1 cup (maybe more) shredded parsnips

1 cup (about) shredded zucchini

olives (Lindsay brand is the best!)

Organic shiitake mushrooms

spices

Heat oven to 400 and bake for 30 minutes.  It really is that easy!

It might not look the most appetizing, but I had to hurry and put the rest in the fridge before I plowed down the entire thing.  So I would call that a success!  Besides spilling olives everywhere, making the toppings spill all over my shirt, and almost ruining the whole thing.  Hmm… guess it’s a clumsy day!

Random annoyance of the day:  I was pulling my blinds up to open the window and they snapped in half and fell.  Really.  This will be my 4th set of blinds that I have gone through this year.  Either I’m too strong for these blinds or my apartment place just keeps giving me crappy blinds.  I’ll go with number 2.  So now I have no blinds on one window… I’m glad I have tall bushes in front of it so I can still dance to Nelly while I cook (usually it’s Wayne Dyer, but I was feeling a little Country Grammar today).

And one of the most important things…. It’s the end of DAY 29! What what?!  It doesn’t matter too much though because I am going until May 9th 😉  But still.  Pretty pumped!

 

I’m riding the struggle bus today

What is it about today?  I’m going to get out all negativity right now:

-It’s depressing, cold, and cloudy outside

-It’s Tuesday

-I’m still sore from Friday (even after other workouts)

-School is annoying

-I’m still tired after a solid 8.5 hours of sleep.  By solid I mean no-movement-I-woke-up-in-the-same-spot

-Hunger pains have been striking a lot lately

-Motivation is at an all time low

The bottom line says it all.  The thing is that I don’t know why!  Last week felt amazing and I was pumped to eat good and WOD hard.  Now, this week has done a complete 180.  Cravings are hard core and I feel like a lazy slug.  If I had no self-control and real-life views on eating, I would go out and buy some candy, ice cream, popcorn, and other devastating cheat food and sulk in my laziness.  Thankfully I know better and would feel sick for days if I indulged that bad.

Man, this is a real uplifting post, huh?

The thing is, today is day 28 and I thought I would be feeling on top of the world and super duper motivated to keep going… it couldn’t be more of the opposite.  Aaaagggghhhh.  Hopefully going to WOD in a couple of hours will help get me out of this annoying funk.

The one cool, superfun thing I am doing tonight???  My sister and I are going to go see Shrek live in Peoria!  How awesome  is that?!

Staying up a bit later than normal will totally be worth it.  This will be a good break from my typical Tuesday night consisting of The Biggest Loser.  I. Can’t. Wait. Weeeeee!

Do you know how hard it is to go to class when: 1.) the teacher e-mails you the Powerpoint slides 2.) it’s a chilly 40 degrees outside 3.) I’ve mentally graduated and 4.) my bed looked extra warm and comfy….  Yes, it was one of those mornings – I debated going to class up until I was walking out my door.  I actually did make it to class and I’m glad I went because we got points for going.  Looks like I’m not the only one with terrible Senioritis!

Today is officially day 27.  Seriously this has gone by so fast.  I thought it would drag on and just make me annoyed, but it’s been the complete opposite.  I think writing about it has made it go faster and easier, since I feel somewhat accountable for making it public that I’m cleaning it up for a month (or more).  I also made it through another movie night filled with munchy crunchy goodness popcorn all around me!  Thank you, coconut flakes!

Saturday consisted of a 9-5 workday back at home, and I was able to avoid eating any of the protein bars and drinks that are for sale.  What I did munch on was awesome… Salmon mixed with shredded zucchini and avovado.  YUM.  I’m sure my co-workers enjoyed the aroma as I blabbed on how good it tasted.

Yesterday, I went in to CrossFit Instinct for a Westside Barbell workout with some BAMF ladies.  Worked on dynamic bench, HSPUs, dips, chest-to-bar and butterfly pullups, and some hollow-body holds.  Fun!  Then I got to hang with my sissy, Molly. =)  She recommended new hair stuff for me (thank god!) and we went to a few other places.  Funny thing is, we went to Target and checked out the new food aisles ooh-ing and mmm-ing at non-Paleo food – but, we ended up leaving with only Larabars!  Nice try, pop-tart and cookie advertisements!

I am so thankful that my parents are such healthy people… I had a home cooked Whole30 meal with them last night and it was aaawwweeesssommmmee.  Part of it was because everything tastes better when made by my mom and it was something different.  I had some chicken, parsnip-zucchini “pancakes”, and salad.  Here’s a picture of the salad made by my mom (all Whole30 ingredients!)

I attempted to shred zucchini and parsnips in the food processor and make something like potato pancakes… Let’s just say those are a trial and error thing.  Not so pancakey and not very pretty.  They tasted good, though!

Ok.  I have to go drag myself to class now.  Two more for the day then store time!  I love going grocery shopping.  Time for some new recipes tonight… More updates later!
