It’s not delivery…

I love my life right now! I get to wake up, work out while the sun’s rising, help coach some amazing people at 6am, go to an awesome internship, and head home for the day around 1pm. What’s not to like?!
I was lucky enough to have two great groups of kids for plyometrics; they work hard, are hilarious, and, although they complain, know how to joke around and be sarcastic. I’m going miss these little munchkins! It’s not only taught me that I want to wait a long time for kids, but also that giving young ones a positive experience with exercise is so important.
Anyway, I was feeling sassy yesterday evening and decided to try and make a… Drumroll please…. Paleo pizza.

Since I’ve become more sensitive to nuts, I tried the crust with some riced cauliflower. Bomb choice!! Here’s the magic:

-1.5 cups riced cauliflower
-3/4 cup almond meal
-2 eggs
-garlic powder
-minced onions
-s&p to taste
-basil
-your choice of meat (I used ground beef)
-tomato paste (just tomatoes for ingredients!)

First mix up riced cauliflower and almond meal with eggs, onion, s&p, and garlic. Lay out on a greased cookie sheet, but don’t spread super thin! Bake it for 15 minutes at 425 degrees.
Add your sauce and toppings and put it back in the oven for about 10 minutes. Cut, devour, and enjoy (let it cool or you’ll burn your mouth like I did… I’m very impatient with my food).

This makes enough for 2 servings and is good for breakfast the next morning. Yes, cold pizza in the morning. I swear I’m not hungover either.

I’m going to go ahead and pretend it hasn’t been forever since I’ve written on this thing…

Obviously, I’ve been too busy to tell you all about my life, so I’ll sum it up in some pictures!

This was my AMAZING meal that I got at Cafe Andiamo when I went to lunch with my Dad for his birthday.  They have a Paleo-friendly menu; I got the Chipotle Turkey Sliders and some sweet potato chips.  MMMmmmm definitely going back to try more!

Here’s my not-so-Paleo meal that gladly ate while I was in St. Louis for one of my friend’s bachelorette party!  I was a good little cavegirl and didn’t eat the bun, but somehow those homemade chips found their way into my mouth.  So sneaky.

Here’s a group of us CrossFitters out at a club with the bride, Megan, showing off our intoxicated handstands!  Somehow alcohol and CrossFitters always equals handstands and other random movements throughout the night!

 Yes. This is 15.5 ounces of Coconut Oil.  Only $6.99.  Perfect timing because I was out!  I’m going to miss Kroger once I move back home!  Is it weird to get excited about coconut oil?

I know what you’re thinking… this looks like a pile of dog sh*t.  I would have to agree.  If dog sh*t really tasted like these though, I would join my dog, Teddy, out in the yard and scarf down our other dogs doo doo everyday, too!  Ok, besides that, I attempted to make Paleo cookies without any added sugar (honey and so on) and ended up using almond flour, almond butter, apple sauce, carob powder, cinnamon, and an egg.  They were a tad bit dry, but they kept me from driving down to Casey’s and scarfing down some of their cookies or Drumsticks!

Roasted brussels sprouts! Yummmm.  I can’t eat too may at a time though, or else my tummy turns into a rumbling mess and it’s not a good day.

Here’s my dinner that I’ve been eating all week!  Salad with some blueberries, cherry tomatoes, walnuts, and chipotle chicken.  Drizzled of course with my new fav dressing!  Thanks to the cookbook Well Fed, her creamy Italian dressing goes well on everything. Score!

In case you haven’t heard, the CrossFit Games started yesterday and continue this weekend! That means, I will be glued to the live stream alllll weekend.  Saturday, CrossFit Instinct is allowing their members to hang out in the box all day and watch the games.  The catch is that we are doing “2 girls 1 guy’ while watching them!  Get your mind out of the gutter, it’s 2 girl WODs and 1 hero WOD.  Sunday is for sure going to be a rest day!!!

Random story to end on…

There is a young girl who trains where I am interning at and her name is Angel, which is my dog’s name.  During one of the group sessions, I had to voice her name quite often; let’s just say it’s so weird talking to someone with your dog’s name.  What’s even weirder is that when I say ‘Angel’, a human voice responds instead of a wagging tail.  I have to keep myself from petting her head and say ‘sit’….

I think this wins the most boring post of all time, so I apologize!

2 weeks until the CFI float trip.  3 weeks until my internship is over and I move back home with the boy.  Yay!!

I’m now a Wascally Wabbit…

When I was little, my mom used to always cook me, my dad, and my two sisters a whole-hearted healthy dinner.  That being said, she always made vegetables and we had to finish them from our plate before we could get up.  When it came to green beans, broccoli, cabbage, cauliflower, peas, or a few others, I had no problem chowing them down with my mouth full of braces.  But, slap some squash or cooked carrots in front of me and I would sit there forever and gag every time I tried forcing it in my mouth.

Well, almost 15 years later, I am a proud vegetable eater and my new obsession is…

CARROT CHIPS.

Unbelievable right?! I still hate steamed/cooked carrots, but the way I’ve been making them, I could eat the sh*t out of them!  And it’s super easy to prepare and you just throw it in the oven.  First, you have to be lazy and buy the pre-cut carrot chips.  Since I don’t have a mandoline (I really really want one!), this is way easier than fussing around with a knife for hours.

Then, you throw however many you want in a Ziploc bag, toss with your choice of cooking oil, add whatever spices you like (I like Mrs. Dash’s Garlic & Herb blend), and put in the oven for 15-20 minutes at 425.

Voila!  Carrot chips, scotch eggs, and homemade C-Dub Dip (aka Paleo mayo, Cholula sauce, pepper, minced onion, and garlic powder).

One of my favorite stores, The Fresh Market, has the most deceiving name.  About 1/5 of their store is healthy and fresh, while the rest is filled with tempting chocolate covered everything, any flavored chips, homemade cookies, desserts, fake-looking cupcakes, and basically anything that would keep me locked up for days with a stomach ache.  I guess a lot of it’s fresh, but when I think fresh, I think healthy.  Do you think this is healthy?

Yes.  It’s 100% edible cookie dough.  Not that regular cookie dough has never been consumed in mass amounts by me, but this is the real deal.  That’s just evil.  Cookie dough is my favorite food.  Cookie dough ice cream, chocolate covered cookie dough, Christmas Eve homemade cookie dough, Papa Murphy’s cookie dough… I could bath in that stuff.

And no, I didn’t cave in and buy it.  I was just that weirdo that stands there and gawks at all the cheat food and looks at all the nasty things in it.  Maybe the next time I lose all self-control, I’ll head back to The Cheat Market and devour this tiny cup of heaven.  But not any time soon =) Paleo Challenge is going awesome and The Cookie Dough Cafe is not going to slow me down!!!!

I love scotch, scotchy scotch scotch…eggs

Before going to bed last night to read the last book of Fifty Shades (yes, yes, I know… I’m one of them.), I was reading through Well Fed and got inspired to try out some new protein recipes.  After a peaceful 8.5 hours of sleep, a yummy breakfast of eggs, beets, and avocado, I had some work to get done.

Instead of starting on my PowerPoint for this Friday and writing my weekly report, I decided to do what I do best.  Procrastinate.  And cook some Paleo goodness.  Reading a cookbook and aimlessly scrolling through Pinterest puts my mind in gear to try some new things or throw in the towel and search for ingredients for the most decadent peanut butter cake that was repinned 52,455 times.  My cavewoman side always wins and my calling was for some Scotch Eggs.

I found this recipe on Melissa Joulwan’s website, but it’s also in her (awesome) cookbook, Well Fed.  These things are protein-packed balls of power that I will be enjoying the rest of the week.  And no, I’m not talking about my boyfriend. 😉

Scotch Eggs:

  • 1 pound (super clean) pork sausage + 1 pound beef
  • 8 hard-boiled eggs
  • 1 tbsp. cumin (for beef only)
  • 1 tbsp. chili powder (for beef only)
  • love

-Preheat oven to 350 degrees.  Since I had 8 hard-boiled eggs and 1 pound of beef and 1 pound of pork, I decided to make 4 eggs with each meat.  After mixing the seasonings with the beef (the pork was pre-seasoned), pinch off about 2 ounces of meat.  Roll out until flat, place egg in the middle, and roll the meat around until it is entirely enclosed.  Place in the oven on a foiled-cookie sheet and bake for 20 minutes.  I turned the broiler on for the last couple of minutes to get the meat a little more crunchy!

YES! That’s CLEAN pork sausage – NO nitrates, MSG, sugar, or any other dirty sh*t. Just pork and spices. And it tastes like heaven. Thank you local organic stores!!!

As for today’s WOD… probably a rest day.  I’m missing out on one of my favorite girls, Grace, but I’m trying to listen to my body and take a day to recover since my entire posterior chain feels stupid sore and in need of mobility!  I plan on spending quality time with my foam roller and lacrosse ball!

Can you believe it’s Monday, June 18th?!  I’ve been graduated for over a month, I’m halfway done with my internship, and it’s already the third week of the Paleo challenge.  Speaking of that, I had to subtract points for cheating for the first time since the start of the challenge.  Saturday night, I had a glass of wine and Sunday I had wings… and they were pretty darn yummy.

But, I’m 100% back on track and didn’t feel too icky after divulging into non-Paleo goodies; I’m just proud I didn’t give into any of the homemade pies or cookie dough cupcake (what the f, YUM) that were at the Farmer’s Market.  That place would be the ultimate place to get cheat food, take it home, curl up and nibble all day.  Good thing I know that side effects and would have a week full of headaches, clothes that don’t fit, and constant trips to the porcelain throne.

Yesterday, I went to the gym and got to do a WOD with fellow beasts; they did 4 workouts but I peaced out after 1 so I could spend some more time with my boy before leaving again for the week.  Here’s the one I did partnered with Molly:

If I wasn’t partnered with her, I probably wouldn’t have gone as hard!  It’s so nice to have someone to work with and push you harder than normal, especially when it’s your older sister who you’ve been trying to catch up to since the old days at Muscle Corp.  and playing hours of 1-on-1 basketball on the driveway!

The most exciting thing I did this weekend was REGISTER FOR MY CROSSFIT LEVEL 1 CERTIFICATION!!!!!!!! I wanted to do it before the end of 2012 and finally gave in and signed up.  September 8th & 9th are going to be dates that I will never forget.  What makes it better is that I get to go with 6 fellow CrossFit Instinct members – I. Cannot. Wait.  I went to bed feeling excited, nervous, and happy with the decision I made.

Then my ‘beautiful’ iPhone harp alarm went of at 4am, letting me know that I need to get my @$$ up and go workout.  I knew what I had coming because I woke up around midnight and checked the WOD for Fit Bodies.  More hamstring work with overhead stuff… hellooooo triceps and legs!  All I can say is that walking up the 3 flights of stairs to my apartment isn’t cool.  Every step I feel like I’m going to fall backwards.  Needless to say, carrying 10 bags full of veggies and meat up those stairs felt like a WOD.

After catching my breath and gathering myself, I spent 2 hours cooking!  Thanks to Nelly radio on Pandora, it made things go a lot quicker.

So this was my attempt at making zucchini fritters… they didn’t come out very pretty or presentable.  But, they taste awesome so that’s all that matters!  I didn’t really measure anything too precisely but here’s what’s in them:

-6 small shredded zucchini

-1 red onion

-1/2 cup broccoli cabbage mix

-Cholula sauce

-3 eggs

-1/4ish cup coconut flour

-spices

This picture is only half of what it made… I am cooking for all week so now I have plenty!

 

Doesn’t this look like puke? Haha it looks disgusting, but is actually pretty good.  I’m going to use it on meats and mix in with tuna and salmon.  I will probably add other stuff to it too, like avocado or paleo mayo, depending on my food mood.

– 1/2 can tomato sauce

-1 can green olives

-some olive oil & lemon juice

-spices

-almonds

This was basically to get rid of some things in my kitchen, so it’s trial and error with ingredients.  I really just wanted to throw raw kale in the food processor and see what happened… and this happened.  Puke-looking, um, Pesto?

 

My favorite!  Paleo Mayo .  This mixes with everything and can be tweaked into any flavor with some spices and imagination!

 

 

 

 

 

 

 

 

…and this is what happens when you get lazy scraping the mayo out of the food processor.  I was sad that almost 2 tbsp. of my beloved mayo was now inedible and all over the floor.  Grr.

 

 

 

 

 

 

 

 

I also cooked up some beets, eggs, and meat.  Now all I have to do all week is eat.  And I never ever have problems with that!

 

Paleo Challenge update!

Do you ever have days were you just feel… lazy? Well, yesterday was one of those days.  Usually after my WOD at 5:15am (yep, I’m a morning WOD freak) I feel amazing and ready to take on anything.  But, after sprints, hang squat cleans, and front squats, I just felt like I got hit by a train.  My contacts felt blurry all day and I had no appetite (yeah, me not wanting food? Weird.).  I had slept for about 6.5 the night before so maybe that’s why.  I’m an 8 hour per night sleeper; any more or any less I feel too tired.  I even came home after work and fell asleep for about an hour, but still felt like I wanted to lay around all day.  After a trip to the store, some dinner, homework, and showering, I was in bed at 8:15.  The feeling of laying in bed when you are tired might just be the best feeling ever!  Buuuut, the reason I wrote about my case of the lazies was because lately, I have been feeling just great.  Know why?

PALEO CHALLENGE!  Today’s officially day 9 (day 10 for my personal record since I started one day early) and I feel super.  I’m not trying to rub it in your face, but not straying from natural, whole foods feels so rejuvenating and refreshing… you should try it.

Here’s been one of my go-to meals that is quick to make and can be made in multiples so you can have tons of leftovers.  I’ve talked about it before but this time, I made some dip to go along.  I know it doesn’t look the most appetizing, but it’s some avocado, cayenne pepper, Cholula Hot Sauce, tiny bit of Paleo Mayo, pepper, and garlic powder.  So yummy!

 

Spaghetti squash… You are always a battle.  Whether I microwave you or cut you raw, you either always burn my hands, make a mess, or almost chop my fingers off.  Either way, I still think you are mighty tasty and love having you in my life.

 

 

Since extra mobility is a bonus point for the Paleo challenge, I have once again become best friends with my foam roller and lacrosse ball.  I just hope the noise of me rolling back and forth can’t be heard by the people below me.  That’d just be weird.

 

 

 

Eating clean also means having extra good WODs; this particular WOD knocked me on my a$$ for a few days.  My 5:15am CrossFit class is pretty big, so by the time I was done warming up for the cleans, the combo of weights I needed were taken.  It was either go big or go home.  I was feeling extra energized so I figured why not use 135# and try to get a couple?  I surprised myself and was able to use it through the whole WOD, but I only got 129 total reps (over 7 rounds), but that’s 24 power cleans.  At a weight that was 5 pounds under my previous max!! I was so pumped! After coming down from my CrossFit/Paleo high that day, the soreness kicked in.  I was beat for the rest of the week!  But, that was the highlight of my month, so I’ll take it!

 

 

 

Ah, the soothing sound of a computer printer.  I went and bought ink so the stupid reminder would stop popping up every 5 seconds on my screen and now it tells me the other cartridge is out and it won’t print my report.  Wonderful.  Sometimes, technology bugs the sh*t out of me.  And this awesome website isn’t posting things right.  AH!

Cookin’ with my Skrillet

Mark your calendars! Paleo season is in full swing! As I said in my last blog, tomorrow is the official beginning of CrossFit Instinct’s Paleo Challenge – I’m throwing on my animal hide 60 days of hunting meat, foraging vegetables, nibbling on little amounts of nuts and seeds, and getting full of radiant health.  Okay, not that extreme but I’m excited to tackle another challenge.  Being the overenthusiastic and slightly-OCD person I am, I decided today will be the first day I stay 100% Paleo.  Simply, I have been allowing too many cheats into my mouth.  They’re sneaky like that.

Last weekend, I gave into peer pressure and inhaled some ice cream (chocolate chip cookie dough and mocha almond crunch to be exact- and it was freaking awesome) and then had a food baby for 2 days.  Later in the week, since I was already on a downward slope, I decided that some dark chocolate covered almonds would make me feel better.  WRONG.  The food baby appeared again.  Once a month, sweet cravings take over me and I am under their power for a few painful days…

But now, I’m on track and even bought Melissa Joulwan’s cookbook, Well Fed, and it is awesome; tons of easy recipes and ways to tweak everything.  I HIGHLY suggest her book if you need some Paleo-spiration.  I also bought the iPhone App, Fast Paleo for even more ideas and more excuses for me not to slip up and end up in a carb-coma.

An idea from Well Fed –
1/2 red pepper
1/2 cucumber
small handful of olives
small handful of snap peas
some banana peppers
chicken breast (cold)

Here’s a picture of one of the things I already made… Chopping, cooking, and cleaning are always done best when listening to Skrillex Radio on Pandora (hence the title; Skrillex + Skillet = Skrillet).  It automatically makes you go faster and bust out some dance moves!  Good thing I live up high and people can’t see me… I think.

It’s so good and the veggies are good alone or dipped in paleo mayo.  I usually add weird things (like hot sauce) to the mayo and use that as a dip for everything.

 

 

 

 

 

 

 

 

 

 

 

 

cauliflower Rice

Here’s some cauliflower rice before being cooked.  This stuff is the $h!t.  This is a full head and it makes about 3-4 cups and tastes like heaven with coconut aminos.  I’ll be making a ton of this and upping my cauliflower intake for life!
